How to make an amazing kale salad

Gather your supplies

Wash kale carefully. Then pat dry.

Using a paring knife, cut out center stalks.

Like so.

Take a handful of trimmed kale leaves and stack them loosely.

Then roll them tightly into a log.

Thinly slice the kale and repeat with remaining leaves. Add sliced leaves to a salad bowl.

Now make the lemon vinaigrette. Add lemon juice and crushed garlic to a small bowl. Then add a teaspoon of Dijon.

Slowly whisk in olive oil. I use a little less than 1/4 cup. Then add salt and pepper to taste.

Pour vinaigrette over the kale and mix thoroughly.

Let kale marinate for twenty minutes and then enjoy!
